Caramelized Onion Dip
This hassle free recipe will quickly become one of your favorite dips.
Equipment
- Instant Pot
- Chef's Knife
- Cutting Board
- Wooden Spoon
Ingredients
- 3 lbs Yellow Onions Aprox 3 large
- 6 Tbsp Unsalted Butter
- 1/2 tsp Baking Soda
- 1 tsp Salt
- 1/2 tsp Pepper
- 12 oz Sour Cream
- 8 oz Cream Cheese 1 Brick
- 1 Tbsp Soy Sauce
- 1/4 Cup White Wine Chablis or Pinot Grigio work well
Instructions
- Melt the butter in your Instant Pot using the sauté function. Add sliced onions, baking soda, white wine, salt, and pepper. Stir to combine. Continue cooking and stirring occasionally for another 5 minutes.
- Put the lid on your Instant Pot, make sure the vent is set to “Sealing”, and cook on high pressure for 15 minutes. When finished, quick release the pressure.
- Remove lid and press the sauté button again. Stir constantly for 5 – 10 minutes until most of the liquid has evaporated. The onions will probably not be large discernible slices at this point, and the mixture should be dark brown.
- Strain into a fine mesh sieve to strain the excess butter/liquid that is leftover. (Important so the dip does not taste TOO buttery. You can leave a little juice for added flavor - but not all)
- Add the onions, sour cream, cream cheese, and soy sauce to a bowl. Mix well, then add salt & pepper to taste.
- Refrigerate at least a few hours before serving.
