Equipment

  • Instant Pot
  • 7" Springform Pan
  • Trivet
  • Instant Pot Sling (Or make one out of tinfoil)

Ingredients
  

  • 1 1/2 Cups Water
  • 3 Tbsp BUtter (Melted, Divided)
  • 1/2 Cup Graham cracker or Vanilla Wafers
  • 1 lb Cream cheese (2 - 8oz bricks)
  • 1/2 Cup Sugar
  • 2 Eggs
  • 2 tbsp Key Lime Zest
  • 1/2 tsp Vanilla Extract
  • 1 1/2 tbsp All purpose flour

Instructions
 

  • Prepare the Instant Pot adding 1 1/2 cups of water and inserting the Trivet.
  • Butter a 7 inch springform pan with 1 tablespoon of butter.
  • In a small bowl, combine the graham crackers (Or vanilla wafers) and remaining 2 tbsp of butter. Press into the bottom of the pan and almost halfway up the sides.
  • In a large bowl or stand mixer, beat together the cream cheese and sugar until very smooth. Add the eggs and beat until creamy. Add the line juice zest and vanilla and beat until combined. Add the flour and beat just until combined.
  • Pout the mixture into the pan on top of the prepared crust. Place the pan on the steam rack and secure the lid.
  • Select manual or pressure cook and cook at high pressure for 15 minutes
  • Once cooking time is done, natural release for 10 minutes. Then quick release the remaining pressure and remove using the sling.
