Meatloaf
Meatloaf is comfort food. This traditional main course has been around for as long as anyone can remember. It’s tasty, it’s easy to make and it’s easy to adlib and change it up a bit.
Make this for your friends and they will be sure to come back often!
Equipment
- Instant Pot
- Tinfoil
- Chef's Knife
- Cutting Board
Ingredients
- 2 lbs Ground Beef (Or Pork or Turkey)
- 2 Large Eggs
- 2 tbsp Worcestershire Sauce
- 4 cloves Garlic
- 1 tsp Salt (Or to taste)
- 1/2 tsp Freshly ground pepper (Or to taste)
- 1 tsp Dried Sage
- 1/2 cup Sweet onion, Diced (or 3 tsp dried minced onions)
- 1/2 cup Breadcrumbs
Instructions
- Add all of the meatloaf ingredients to a large bowl and gently mix everything to combine (without over-working the meat).
- Form the meat mixture into a round loaf that will fit into your instant pot.
- Place the loaf on a large piece of tinfoil and fold the edges of the tinfoil up to make a secure nest for the meatloaf to rest in. (You want the edges high enough that grease from the loaf wont spill out onto the potatoes while cooking.)
- Place the Instant Pot wire rack on the bottom of the Instant Pot. Add 1 cup of water to the bottom of the instant pot. Place the tinfoil nest with the meatloaf on top of the rack.
- Secure the lid on the pot and close the pressure release valve. Select manual/High pressure and cook at high pressure for 25 minutes*. When the timer beeps, allow the pressure to naturally release for 10 minutes.
- Remove the IP lid, and carefully remove the meatloaf. Discard the tinfoil and drippings.
Notes
Side Dish
This is a classic comfort food for many. Potatoes and a vegetable such as broccoli or carrots are the perfect accompaniment.

Options
There are so many things you can do to jazz this recipe up.
- Grab your favorite BBQ sauce and generously brush the top of the meatloaf with the sauce. Don’t be shy. This will give the meatloaf a little spicy kick and help caramelize the top of the meatloaf.
- Lay pieces of bacon on top of the meatloaf. This will ensure the juices stay in the meatloaf and add an extra kick of flavor. Everything tastes better with bacon.
