Equipment

  • Instant Pot

Ingredients

  • 6 Medium Baker potatoes
  • 1 Cup Cold water

Potato Toppings (Choose your favorites)

  • Sour Cream
  • Bacon Bits
  • Butter
  • Chives
  • Shredded Cheese

Instructions

  • Place 1 cup cold water in Pressure cooker pan and place trivet in instant pot. Make sure the water is cold or it will affect the cooking time of the potatoes.
  • Pierce potatoes 5-6 times with a fork to allow pressure to release while cooking. (Important - this prevents the potatoes from exploding during cooking)
  • Add potatoes carefully on trivet (stacking on top of each other if needed). Place lid on instant pot and seal the valve.
  • Set to high pressure for 12 minutes.
  • Once cook time has elapsed, allow pressure to naturally release for 8-10 minutes, do a quick release. Remove potatoes from Instant Pot and serve up with whatever toppings you like.

Notes

Cooking times:
Small Potatoes: 10 minutes
Medium Potatoes: 12 minutes
Large Potatoes: 20 minutes
NOTE: DO NOT place more than 8 potatoes in the pot or pressure will not build properly and potatoes will not cook through.
