Apple Bread with Salted Caramel Icing

Ingredients
  

  • 3 Apples, peeled, cored, cubed
  • 1 Cup Sugar
  • 2 Eggs
  • 1 tbs Vanilla
  • 1 tbs Apple Pie Sauce
  • 2 Cups flour
  • 1 Stick Butter
  • 1 tbsp Baking Powder

For the topping

  • 1 Stick salted butter
  • 2 Cups Brown Sugar
  • 1 Cup Heavy Cream
  • 2 Cups Powdered Sugar

Instructions
 

  • In your mixer cream together eggs, butter, apple pie spice, and sugar until creamy and smooth.
  • Stir in your apples. In another bowl mix flour and baking powder. Add your flour mix to your wet mix. I added half of my mix at a time.
  • The batter was thick. Pour into your 7" springform pan.
  • Place your trivet in the bottom of your Instant pot and one cup of water.
  • Place your pan on the trivet.
  • Put on manual high pressure for 70 minutes.
  • Do a quick release. Remove and top with Icing.

Icing Directions

  • Melt butter in a small saucepan add brown sugar and let come to a boil continue cooking for 3 minutes or until sugar is melted.
  • Stir in heavy cream. continue cooking for 2-3 minutes. until slightly thickens.
  • Remove from heat and let completely cool.
  • Mix in powdered sugar with a whisk until creamy with no lumps.
