Ingredients
  

  • 1 lb Hot Italian sausage - casing removed
  • 1 Large yellow onion chopped
  • 3 Cloves Garlic Minced
  • 1/2 tsp Kosher Salt or to taste
  • 1/2 tsp Fresh ground pepper or to taste
  • 8 Cups Chicken Broth (For added flavor use Chicken Broth with White wine)
  • 4 Large Russet Potatoes Diced
  • 1 Bunch Kale, leaves stripped and chopped
  • 3/4 Cup Heavy Cream
  • 4 Slices Cooked bacon, chopped Make sure the bacon is cooked prior to adding to recipe
  • 1/4 Cup freshly grated Parmesan Cheese for serving

Instructions
 

  • In a large pot over medium heat, cook sausage, breaking up with the back of a wooden spoon, until browned and no longer pink, 5 to 7 minutes. Transfer to a plate to drain.
  • Add onion to pot and let cook until soft, 5 minutes, then add garlic and cook until fragrant, 1 minute more. Season with salt and pepper. Add chicken broth to pot and deglaze pot.
  • Then and potatoes, close lid, set pressure valve to seal and set instant pot to manual for 8 minutes.
  • Once timer goes off, do a quick release of the pressure.
  • Set Instant Pot to Sauté and stir in kale and let cook until leaves are tender and bright green, (Aprox 3 minutes), then stir in heavy cream, sausage, and bacon and simmer 5 minutes more.
  • Season with pepper, garnish with Parmesan cheese, and serve.

Notes

If this is a little too spicy, you can replace the Hot Italian Sausages with Mild Italian Sausages and it will bring the spice level down a few notches!
