Sausage and Peppers

This amazing Entrée is amazingly versatile. You can serve it over rice, pasta, or serve it in a bun. The options are endless! Its quick, its easy and its the moistest sausages you will ever eat!

Ingredients
  

  • 6 Italian Sausages
  • 1/2 Cup Vegetable or Chicken Broth
  • 1 Red Bell Pepper Cut into strips
  • 1 Green Bell Pepper Cut into strips
  • 1 Medium Yellow Onion Diced
  • 1/2 Cup Mushrooms Optional

Instructions
 

  • Set the Instant Pot to Sauté setting and place sausages in pot. Cook lightly until all sides of Sausages have a crisp cooked outer layer. (NOTE: You can do this in a stove top skillet if you prefer.) DO NOT over cook the sausage here. The goal is to just brown the sausage casing to get a crispy outer shell.
  • If the sausages were grilled in Instant Pot - remove sausages and Pour vegetable (Or Chicken) broth in to the Instant Pot. Deglaze the bottom of the pot with the broth, and then put sausages back in the Instant Pot in a single layer. If sausages were done on stove top, add them to the pot after the chicken broth has been added.
  • Close the lid on the Instant Pot and turn the valve to Sealing position.
  • Press the "Pressure Cook" or "Manual" button and set the time for 15 minutes.
  • While the Instant Pot is cooking the Sausages - Peel and dice the onion, and cut the peppers into strips. If you wish to add mushrooms, cut them into slices
  • When the Instant Pot is done cooking, carfully quick release (QR) the steam. (Always put a cloth over the vert to prevent burning your skin)
  • Once the pressure has been released, carefully open the lid and place the sausages on a plate.
  • Add the peppers, onions and mushrooms to the remaining broth.
  • Place the Instant pot on Sauté and cook the peppers, onions and mushrooms until onions are see through.
  • Remove peppers, onions and mushrooms from broth. Serve on top of sausages

Notes

Plating
This versatile dish can be served in a variety of methods.
  1. Plate over cooked Rigatoni noodles. (Feel free to use broth in Instant Pot for added juices) 
  2. Plate over cooked rice, Quinoa or cauliflower rice. (Feel free to use broth in Instant Pot for added juices)
  3. Put the sausage and peppers in a bun and enjoy like a hot dog!
  4. Wrap it.  Fill a tortilla shell and make a sausage wrap
Drink Selection
A pillsner beer accompanies this meal well.  If you are not a beer fan, a full bodied white wine such as a Pinot Grigio (Gris) will work well.
