Pork Roast

Pork Roast

Pork roasts are a comfort food favorite. Cooking in the oven is time consuming and if you leave it in too long - you end up with tough dry meat! Instant Pot Pork Roast is delicious and juicy!

Equipment

Ingredients
  

  • 1 1/2 tsp Salt
  • 1 1/2 tsp Pepper
  • 1 tsp Garlic Powder
  • 2 tbsp Olive oil (Divided)
  • 2 lb Pork Roast (Also called Pork Butt)
  • 2 cups Chicken Broth (You can use vegetable broth or water instead)
  • 1 Large Yellow Onion (Cut into quarters)
  • 3 Cloves Garlic

Gravy

  • 3 tbsp Cornstarch

Instructions
 

  • In a small bowl, combine salt, pepper, and garlic powder and stir to combine.
  • Rub pork roast with 1 tablespoon of olive oil and season with the salt mixture on all sides.
  • Select the Sauté button to heat the Instant Pot. When “Hot” is displayed, add the remaining tablespoon of olive oil.
  • Add the seasoned pork roast and sear on all sides, approximately 4 minutes per side. (Note: I find it easier to sear meat on the stove using a cast iron skillet for a great sear. Less cumbersome)
  • When roast has been seared on all sides, press Cancel and remove roast from the Instant Pot. Place on a plate and set aside.
  • Add the broth or water to the Instant Pot, scraping any bits from the bottom with a wooden spoon or rubber spatula.
  • Place the trivet in the bottom or the Instant pot. Lay the roast on top of the trivet and arrange the onions and garlic around.
  • Cover pot, lock on the lid, and set the steam release valve to Sealing
  • Select the Pressure Cook (Manual) button and set the cook time to 30 minutes.
  • When the cooking cycle has finished, allow the pot to sit for 10 minutes (Natural release), and then do a quick release of the remaining pressure by moving the valve to Venting.
  • Remove the pork to a cutting board and let rest 5 minutes.
  • Carve the roast into 1/2” slices. Or shred the roast with two forks if you want do use it as pulled pork!

Gravy

  • While the roast is resting on the cutting board. Add 3 tbsp of cornstarch to liquid remains in instant pot.
  • Set Instant Pot to Sauté and stir until cornstarch is completed mixed and the gravy comes to a light boil.
  • Strain the gravy into a gravy bowl. (You can opt not to strain if you want the onions and roast bits as part of the gravy). Tastes great either way.

Notes

Drink Selection
A light white wine will accompany this meal well.  Try a Pinot Grigio or a Moscato if you like a sweeter wine.
