[wpurp-searchable-recipe]Popcorn – – Ghee or unrefined coconut oil (CRITICAL – do not use regular oil), Salt (Or to taste), Popcorn kernels, (OPTIONAL) Chocolate or Vanilla Protein powder, , Press “Saute” on the Instant Pot, then press “Adjust” until the light is on “More”. Add 2 tablespoons of ghee and cover the pot (preferably with a see-through lid).; When Instant Pot says hot and ghee is melted, add salt and stir or swirl the pot to mix it in well with the ghee (the pot isn't very hot at this point so I simply lift the pot out and swirl it to combine). ; Add 3 popcorn kernels. When at least 2 of them have popped, add ½ cup of popcorn kernels and place lid on top.; Lift inner pot out and swirl the kernels for 30 seconds to coat them with the salt and butter and to warm them up.; Return pot to the base. Adjust lid so there is a small space for steam to escape. Popcorn will start popping after 3 – 4 minutes and will continue to pop for 2-3 minutes. ; Remove the liner (I use a hand towel if it's too hot) and shake the pot from side to side once during this time so the kernels don’t burn. Ingredients
  

  • 2 tbsp Ghee or unrefined coconut oil Extra virgin coconut oil is best.
  • 1 tsp Salt (or to taste)
  • 1/2 Cup Popcorn Kernels
  • 2 tbsp Chocolate or Vanilla protein powder OPTIONAL

Instructions
 

  • Press Sauté on the Instant Pot, then press Adjust until the light is on “More”. Add 2 tablespoons of ghee and cover the pot (preferably with a see-through lid).

Notes

It is of critical important not to use low smoking point oil such as Canola oil, Olive oil etc as the oil will burn.  Be sure to use an oil with a high smoking point, such as Coconut oil.  We have found Extra Virgin Coconut oil to be the best oil for this recipe to be a success.

One of the greatest things about this recipe (Besides its very simple), is there is lots of room to experiment. Feel free to add your favorite hot sauce, or hot peppers. There are literally an unlimited amount of sauces, peppers and other spices you could add to this dish to kick it up a notch. Or, if your taste buds prefer not to be on fire, keep the recipe as it is and enjoy this hearty favorite. – Lean Ground Beef (Or Pork or Turkey), Taco Seasoning ((Mild, Medium or Hot – your choice)), Garlic – chopped very fine, Medium Red Onion – Chopped fine, Oregano, Salt (Or to taste), Pepper (Or to taste), Can Diced Tomatoes, Can Red Kidney Beans, Can Black Beans, Tomato Paste, , Turn the instant pot to Sauté – add the meat, onions, garlic and cook for 2-3 minutes.
; Add the Taco Seasoning, Oregano, Salt, Pepper and cook until ground beef is cooked through.; Add beef broth and chili’s (Optional), bring to boil. Use the beef broth to deglaze the bottom of the Instant Pot. This is a critical step to make sure proper pressure is built up later. ; Open black beans and place in strainer – rinse under water thoroughly and add to pot; Open kidney beans and place in strainer – rinse under water thoroughly and add to pot; Add the Tomatoes, Tomato paste and stir ingredients thoroughly together; Cancel Sauté setting. Put lid on and press the Pressure Cook/Manual button and the +/- buttons until you get to 6 minutes. The pot will take some time to build the pressure up before the timer starts. This is normal – be patient. ; When the cooking cycle has finished let the pot sit undisturbed for 15 minutes. DO NOT release any pressure at this time. Then do a controlled quick release of the pressure by turning the knob to the venting position in short bursts. (Use a wooden spoon handle as to not burn yourself). When you are confident that no soup will spew out with the steam, open the knob all the way and allow the remaining steam to escape. ; When the pin in the lid drops down, you can open the lid facing away from you. Sour Cream, Shredded Cheese (Monterey Jack, Cheddar, shredded), Avocado (or Guacamole), Red Onion Diced, Jalapeno (Diced), Green onions

<strong>Plating</strong>

This has to be one of the easiest meals to plate and make it look awesome.  Simple use the ladle to carefully scoop Taco Soup into a bowl, garnish with your garnish of choice.  For most elegant plating sprinkle shredded cheese over Taco soup, add one generous table spoon of Sour Cream to the center of the dish and sprinkle chopped green onions over the sour cream.

<strong>Drink Selection</strong>

This meal is best served with a full bodied beer like a stout.  Or if wine is more your thing, I find a nice red Barolo an excellent choice to accompany this meal.

<strong>Tips</strong>

  • 2 lbs Ground Beef (Pork or Turkey can be used)
  • 1 pkt Taco Seasoning Mild, Medium or Hot - Your choice
  • 3 Cloves Garlic (Chopped Very Fine)
  • 1 Medium Red Onion diced fine
  • 1/2 tsp Oregano
  • 1/2 tsp Salt (Or to taste)
  • 1/2 tsp Pepper (Or to taste)
  • 1 10oz can Diced Tomatoes
  • 4 Cups Beef Broth
  • 1 14oz Can Black Beans Rinsed thoroughly
  • 1 14oz Can Kidney Beans Rinsed thoroughly

Instructions
 

  • Turn the instant pot to Sauté – add the meat, onions, garlic and cook for 2-3 minutes.
